Crumble topping:
- 3 heaping tablespoons old fashioned oats
- 1 tablespoon ground flax seeds
- 1/2 tablespoon chia seeds
- 1 tablespoon sweetener of choice (I used #sugarintheraw because I felt the granulated texture would work better in the crumble).
- 1 tablespoon organic coconut oil
- cinnamon to taste (I added a lot, of course).
Filling:
- 3 apricots, sliced (you could probably substitute 2 small peaches or 1-2 apples diced finely).
Preheat oven to 425. Mix crumble ingredients & prepare apricots. Add into small baking dish and bake for 15-20 minutes.

Afternoon snack!
- On the left is peach iced tea (7 or 8 bags of peach #herbaltea by #celestialseasonings + enough water to brew each bag [I used a little less than 64 ounces because I’m adding ice, so about 56-60 ounces] + sweetener of choice [I used about a 1/4 cup of #sugarintheraw] + lots of love!).
- On the right is an almond-stuffed date! A great alternative to peanut m&ms or any type of candy craving. I used unsalted roasted almonds in mine, but I bet the dark cocoa roasted almonds would taste delicious in this, as well!

Feta & tomato pasta!
Boil quinoa pasta. Blend up 3 whole vine ripened tomatoes & add to a pot (I used the pot that I cooked the pasta in) until cooked to your taste. I added garlic powder + onion powder + dried basil + sea salt + cracked black pepper + pinch of sugar. Add quinoa pasta to tomato mixture & boil until to your desired thickness (I let mine get like a stew consistency. Not quiet a pasta sauce or a soup broth). Add in about 1/5 cup crumbled feta cheese. Enjoy!

Thursday brunch!
A little bit of egg drop soup & a few torn up pieces of baked chicken breast. Cucumber salad (cucumber, #braggsapplecidervinegar). Overnight oats (old fashioned oats, 6 strawberries, 1 scoop of vanilla protein powder, 1 cup of plain greek yogurt, dash of unsweetened almond milk). And 32 ounces of room temperature water!
I know the egg drop soup isn’t all that healthy, but it’s one of the only things in the house to eat & I feel super sick lately. Want to kick this illness to the curb ASAP.

I will call these “mini protein scones.” Cooked them in the microwave. No idea how the heck I made them. I know they have pumpkin purée, vanilla protein powder, old fashioned oats, a tiny bit of flour, agave nectar, and cinnamon. Totally gonna start making these so I can have an easy breakfast/dessert/snack and figure out how the heck I made them.
Coral colored breakfast!
Homemade lemonade (juice of 2 lemons, juice of 1 orange. Slice both lemons and orange up after juicing and toss in a 1 quart container/pitcher and add water until full. Do not add any sugar or sweetener. Left sit in the fridge overnight. Very strong & tart, but so yummy).
Mango & plum smoothie (4 plums, peeled and quartered. 1/2 cup frozen mango. Very small handful of frozen raspberries. 1/2 packet of stevia in the raw. Homemade lemonade until magic bullet is full, or if using a big blender I’d say I used about a cup of my homemade lemonade. Blend until smooth).
Pb&j oatmeal (1/3 cup of old fashioned oats, tbsp chia seeds, tbsp flax meal, small handful of frozen raspberries, tbsp of coconut oil, drizzle of agave nectar, enough unsweetened almond milk to cover oats. Microwave for 1 & 1/2 minutes. Add tbsp peanut butter after its been cooked).

1/2 cup whole wheat rotini, 1/4 cherry tomatoes, 2 tbsp of homemade greek dressing.
Roasted zucchini (2 medium zucchinis, 1 tbsp coconut oil, garlic powder, salt, pepper).
Roasted sweet potato (1 medium sweet potato, 2 tbsp agave nectar, 1 tbsp coconut oil, lots of cinnamon).
Big salad of baby spinach, little bit of romaine, orange slices/segments, and a drizzle of extra virgin olive oil, freshly ground black pepper & sea salt, and lemon juice/orange juice. So tasty!
